There are over 100,000 species of flies but the most common pests in restaurants are filth flies, of which there are over 200 species.

Flies have been proven to transmit more than 65 kinds of human pathogens, as well as several kinds of food poisoning. Flies are regarded as a greater threat to human health than most other insects.

Drain flies reproduce in polluted, shallow water or highly moist organic solids. The eggs, larvae and pupae can be found in the muck, slime, or gelatinous film often accumulating on the sides of drains and overflow pipes.

Fruit flies are so named because of their attraction to the sour odor of fermentation and bacterial waste. This makes food handling facilities particularly susceptible because of large amounts of ripening fruit and food waste. Control of the larvae is absolutely essential to controlling the population, therefore sanitation and removal of over ripe or rotten fruit is the first priority.
